Jalapeño Popper Meatloaf

Ingredients:

  • 2 lbs ground beef
  • 1 cup chopped jalapeno peppers (seeds and membranes removed)
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8-10 slices of bacon

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped jalapenos, shredded cheddar cheese, breadcrumbs, milk, beaten egg, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  3. Line a baking sheet with parchment paper and shape the mixture into a loaf shape on top of the parchment paper.
  4. Lay the bacon slices over the meatloaf, tucking the ends underneath the loaf.
  5. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
  6. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.

This meatloaf is a spicy and cheesy twist on a classic burger. The chopped jalapenos and shredded cheddar cheese add a delicious heat and creaminess to the meat mixture, while the breadcrumbs, milk, and egg help to keep the meatloaf moist and tender.
