Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 slices fresh mozzarella cheese
  • 2 large tomatoes, sliced
  • Fresh basil leaves
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Balsamic glaze, for drizzling
  • Fresh basil, for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.
  2. Butterfly the chicken breasts by slicing horizontally through the center, without cutting all the way through. Open the chicken breasts like a book.
  3. Place a slice of mozzarella cheese, tomato slices, and fresh basil leaves inside each chicken breast. Season with salt and black pepper.
  4. Fold the chicken breast over the filling and secure with toothpicks, if needed.
  5. Heat the olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts for about 2-3 minutes per side until golden brown.
  6. Transfer the seared chicken breasts to the prepared baking dish and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
  7. Remove from the oven and let the chicken rest for a few minutes. Drizzle with balsamic glaze and garnish with fresh basil, if desired. Serve hot and enjoy!
