Ingredients:
- 500g firm white fish fillets, cut into bite-sized pieces
- Juice and zest of 1 lemon
- 2 cloves of garlic, minced
- 2 tablespoons chopped fresh herbs (such as parsley, dill, or thyme)
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- Olive oil for drizzling
Instructions:
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a bowl, combine the lemon juice, lemon zest, minced garlic, chopped fresh herbs, salt, and pepper. Mix well.
- Place the fish pieces in the lemon herb marinade and toss gently to coat. Let them marinate for about 15 minutes.
- In another bowl, mix the breadcrumbs with a drizzle of olive oil until evenly coated.
- Remove the fish pieces from the marinade, allowing any excess to drip off, and coat them in the breadcrumb mixture. Place the coated fish bites on the prepared baking sheet.
