Ingredients:

  • 500g firm white fish fillets, cut into bite-sized pieces
  • Juice and zest of 1 lemon
  • 2 cloves of garlic, minced
  • 2 tablespoons chopped fresh herbs (such as parsley, dill, or thyme)
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • Olive oil for drizzling

Instructions:

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a bowl, combine the lemon juice, lemon zest, minced garlic, chopped fresh herbs, salt, and pepper. Mix well.
  3. Place the fish pieces in the lemon herb marinade and toss gently to coat. Let them marinate for about 15 minutes.
  4. In another bowl, mix the breadcrumbs with a drizzle of olive oil until evenly coated.
  5. Remove the fish pieces from the marinade, allowing any excess to drip off, and coat them in the breadcrumb mixture. Place the coated fish bites on the prepared baking sheet.
  6. Bake for 12-15 minutes or until the fish is cooked through and the breadcrumbs are golden and crispy.
