Caramelized Onion, Brie and Thyme Pie
This Caramelized Onion, Brie and Thyme Pie is an easy-to-make, delicious dish that will be sure to please even the pickiest of eaters. Caramelized onions add a sweet and savory flavor to the creamy brie and a hint of thyme adds an extra depth of flavor. Ingredients:
- 1/2 cup butter
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/3 cup ice water
- 2 tablespoons olive oil
- 3 onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon thyme
- 1/2 teaspoon pepper
- 1 wheel of brie, sliced
- 1 egg, beaten
Directions:
- Preheat oven to 375 degrees F. In a medium bowl, combine the butter, flour, and salt. Using a pastry cutter, cut the butter into the flour mixture until it resembles coarse crumbs. Slowly add the ice water, stirring until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onions and sugar, and cook until the onions are golden brown and caramelized, about 10 minutes. Stir in the thyme and pepper, and set aside.
- On a lightly floured surface, roll the dough into a circle large enough to fit into a 9-inch pie dish. Place the dough into the dish, and trim any excess. Spread the brie in the bottom of the pie crust, followed by the caramelized onions. Brush the edges of the pie crust with the beaten egg.
- Bake for 30 minutes, or until the crust is golden brown. Let cool for 10 minutes before slicing and serving.
