- 2 bell peppers, diced

- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 2 tablespoons balsamic vinegar
Directions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell peppers, zucchini, and eggplant. Cook, stirring occasionally, until the vegetables are just beginning to soften, about 5 minutes.
- Transfer the vegetables to a slow cooker. Add the diced tomatoes, oregano, basil, thyme, salt, and pepper. Stir to combine.
