Vegan Ratatouille with Chickpeas and Olives

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 eggplant, diced
- 1 can (14-ounce) diced tomatoes
- 1 can (14-ounce) chickpeas, drained and rinsed
- 1/2 cup pitted Kalamata olives, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, for garnish
Directions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute.
- Add the zucchini and eggplant and cook for 5 minutes, stirring occasionally.
- Add the tomatoes, chickpeas, olives, oregano, basil, and smoked paprika and stir to combine.
