Ingredients:

  • 1 store-bought pizza dough
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 eggplant, chopped
  • 1 can diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup vegan cheese, shredded
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Roll out the pizza dough on a lightly floured surface into a thin circle. Place on a parchment-lined baking sheet and set aside.
  3. In a large skillet over medium heat, add the onion, garlic, bell pepper, zucchini, and eggplant. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
