Spicy Ratatouille with Chili Peppers and Smoked Paprika

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 red bell peppers, diced
  • 2 green bell peppers, diced
  • 2 zucchinis, diced
  • 1 cup diced eggplant
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup diced tomatoes
  • 2 tablespoons chopped fresh parsley

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
  3. Add the bell peppers, zucchini, and eggplant and cook for 5 minutes more, stirring occasionally.
  4. Stir in the tomato paste, smoked paprika, chili powder, salt, and pepper and cook for 1 minute more.
  5. Add the tomatoes and cook for 5 minutes more, stirring occasionally.
  6. Add the parsley and cook for 1 minute more.
