Spicy Ratatouille with Chili Peppers and Smoked Paprika

Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 red bell peppers, diced
- 2 green bell peppers, diced
- 2 zucchinis, diced
- 1 cup diced eggplant
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup diced tomatoes
- 2 tablespoons chopped fresh parsley
Directions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook for 5 minutes, stirring occasionally.
- Add the bell peppers, zucchini, and eggplant and cook for 5 minutes more, stirring occasionally.
- Stir in the tomato paste, smoked paprika, chili powder, salt, and pepper and cook for 1 minute more.
- Add the tomatoes and cook for 5 minutes more, stirring occasionally.
- Add the parsley and cook for 1 minute more.
