Ingredients:

  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1-2 tablespoons olive oil
  • 1 package (12-16 oz) lasagna noodles
  • 1 package (15 oz) ricotta cheese
  • 1 cup Parmesan cheese, grated
  • 2 eggs
  • 2 tablespoons parsley, chopped

Directions:

  1. Preheat oven to 350 degrees F. Grease a 9×13 inch baking dish with a bit of olive oil.
  2. In a large mixing bowl, combine eggplant, zucchini, bell peppers, and tomatoes. Toss with red pepper flakes, garlic powder, oregano, basil, salt, and pepper.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and the vegetable mixture. Sauté until the vegetables are softened, about 5 minutes.
  4. In a medium bowl, mix together ricotta cheese, Parmesan cheese, eggs, and parsley. Set aside.
  5. To assemble the lasagna, spread 1 cup of the vegetable mixture in the bottom of the prepared baking dish. Layer 4-5 lasagna noodles over the top. Spread 1/2 of the ricotta cheese mixture over the noodles. Add another layer of noodles, followed by the remaining vegetable mixture. Top with the remaining noodles. Spread the remaining ricotta cheese mixture over the noodles. Sprinkle with Parmesan cheese.
  6. Bake for 40 minutes, or until the lasagna is hot and bubbly. Let cool for 10 minutes before serving.
