Creamy Arborio Rice Ratatouille Risotto Recipe
This Creamy Arborio Rice Ratatouille Risotto is a delicious and healthy vegetarian dish that is so easy to make. It is full of flavour and is sure to become a family favourite. All you need is a few simple ingredients and you’ll have this rich and creamy risotto on the table in no time.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup Arborio rice
- 3 cups vegetable stock
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1/2 cup frozen peas
- 1/4 cup freshly grated parmesan cheese
- Salt and pepper, to taste
Directions:
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté for 3-4 minutes, or until the onion is softened and translucent.
- Add the Arborio rice and stir to coat in the oil. Pour in the vegetable stock and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 15-20 minutes, or until the rice is tender.
- Add the bell peppers, zucchini, peas and parmesan cheese. Continue cooking, stirring frequently, for another 5-10 minutes, or until the vegetables are tender and the cheese is melted.
- Season with salt and pepper to taste.
- Serve the risotto hot.
- Garnish with fresh chopped parsley, if desired.
