Creamy Arborio Rice Ratatouille Risotto Recipe

This Creamy Arborio Rice Ratatouille Risotto is a delicious and healthy vegetarian dish that is so easy to make. It is full of flavour and is sure to become a family favourite. All you need is a few simple ingredients and you’ll have this rich and creamy risotto on the table in no time.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup Arborio rice
  • 3 cups vegetable stock
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1/2 cup frozen peas
  • 1/4 cup freshly grated parmesan cheese
  • Salt and pepper, to taste

Directions:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté for 3-4 minutes, or until the onion is softened and translucent.
  2. Add the Arborio rice and stir to coat in the oil. Pour in the vegetable stock and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 15-20 minutes, or until the rice is tender.
  3. Add the bell peppers, zucchini, peas and parmesan cheese. Continue cooking, stirring frequently, for another 5-10 minutes, or until the vegetables are tender and the cheese is melted.
  4. Season with salt and pepper to taste.
  5. Serve the risotto hot.
  6. Garnish with fresh chopped parsley, if desired.
