Ingredients:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 2 cups diced zucchini
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup tomato paste
  • 1 cup vegetable or chicken broth
  • 1 pound Italian sausage, cut into 1/2-inch slices
  • 1/4 cup chopped fresh parsley leaves, for serving

Directions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the garlic, onion, bell pepper, and zucchini and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Add the diced tomatoes, oregano, basil, salt, black pepper, and red pepper flakes and stir to combine. Add the tomato paste and broth and stir to combine.
  3. Add the sausage and stir to combine. Bring the mixture to a boil, reduce the heat to low, and simmer, stirring occasionally, for 20 minutes.
  4. Remove the pot from the heat and let cool for 5 minutes. Serve the stew topped with the chopped fresh parsley leaves.
