This delicious Duck with Orange Sauce is sure to become a favorite main course. The duck is cooked until the skin is crisp and golden brown and the meat is juicy and tender. Ingredients:
- 1 duck (about 5 pounds)
- 3 tablespoons vegetable oil
- 2 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup orange juice
- 1/4 cup white wine
- 2 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- Salt and pepper, to taste
Directions:
- Preheat oven to 350 degrees F. Rinse duck and pat dry with paper towels.
- Heat the oil in a large oven-proof skillet over medium-high heat. Add the duck and cook until the skin is golden and crisp, about 10 minutes. Turn the duck over and cook for another 10 minutes, or until the duck is cooked through.
- Transfer the duck to a plate and set aside. Drain off all but 2 tablespoons of fat from the skillet.
- Add the butter and onion to the skillet. Cook until the onions are soft and golden, about 5 minutes. Add the garlic and cook for another minute.
- Add the orange juice, white wine, brown sugar and mustard to the skillet. Simmer for a few minutes, stirring occasionally, until the sauce is thick and bubbly.
- Return the duck to the skillet. Turn the duck to coat with the sauce. Bake in the preheated oven for 20 minutes.
- Remove from the oven and let rest for 5 minutes before serving. Serve with the orange sauce.
