Roasted Duck with Cherry Sauce

This delicious roasted duck with cherry sauce is a classic dish that is sure to please. The duck is roasted to perfection and the cherry sauce gives it a sweet and savory flavor that is sure to be a crowd pleaser.

Ingredients:

  • 3-4 lb whole duck
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup dry red wine
  • 2 cups fresh or frozen cherries, pitted
  • 1/2 cup sugar
  • 1/4 cup balsamic vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Directions:

  1. Preheat oven to 375 degrees F. Rinse the duck and pat dry with paper towels. Place the duck on a roasting pan and rub the skin with the olive oil. Sprinkle the skin with the salt, pepper, thyme, garlic powder, and onion powder.
  2. Roast the duck in the oven for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees F when tested with a meat thermometer.
  3. While the duck is roasting, combine the cherries, sugar, balsamic vinegar, and water in a medium saucepan. Bring to a boil over medium-high heat and reduce the heat to low and simmer for 10 minutes.
  4. In a small bowl, mix together the cornstarch and red wine. Add to the cherry mixture and stir until the sauce has thickened, about 2-3 minutes.
  5. Remove the duck from the oven and allow to rest for 10 minutes before carving.
  6. To serve, carve the duck and place on a platter. Drizzle the cherry sauce over the duck and serve.
