This Creamy Duck and Broccoli Risotto is a tasty and easy to make dish that is perfect for a weeknight dinner. The creamy risotto is made with succulent duck and fresh broccoli, making it a healthy and delicious meal.
Ingredients:
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- ½ cup of white onion, diced
- 1 cup of Arborio rice
- 1 cup of diced cooked duck
- 2 cups of vegetable broth
- ¼ teaspoon of sea salt
- ¼ teaspoon of freshly ground black pepper
- 2 tablespoons of butter
- 1 cup of Broccoli florets
- 1/3 cup of grated Parmesan cheese
Directions:
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
- Add the Arborio rice and duck, and stir to combine.
- Pour in the vegetable broth and season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
- Add the butter and broccoli to the pan and stir to combine.
- Continue to simmer for an additional 5 minutes, or until the rice is cooked.
- Remove from the heat and stir in the Parmesan cheese.
