Hearty Duck and Lentil Stew Recipe

This delicious Hearty Duck and Lentil Stew is the perfect meal for a cozy night in. Ingredients:

  • 1 ½ pounds of duck legs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 4 cups chicken broth
  • 1 cup dry lentils
  • 1 cup diced tomatoes
  • Salt and pepper to taste

Directions:

  1. Heat the olive oil in a large pot over medium heat. Once the oil is hot, add the duck legs and cook until they are golden brown, about 5 minutes per side. Transfer the duck to a plate and set aside.
  2. Add the onion, garlic, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes. Add the thyme, oregano, and rosemary and cook for an additional 1 minute.
  3. Pour in the chicken broth and bring to a boil. Add the lentils and reduce to a simmer. Cook for 20 minutes or until the lentils are tender.
  4. Return the duck legs to the pot and add the diced tomatoes. Simmer for an additional 15 minutes.
  5. Season with salt and pepper to taste. Serve warm in bowls.
  6. Garnish with fresh herbs and lemon wedges, if desired.
