Ingredients:

  • 2 tablespoons vegetable oil
  • 2 cups chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped bell pepper

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 bay leaves
  • 2 pounds duck, cut into bite-sized pieces
  • 1/2 cup sliced okra
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped parsley

Directions:

  1. Heat the oil in a large pot over medium heat.
  2. Add the onions, celery and bell pepper and cook until softened, about 5 minutes.
  3. Add the flour, stirring to make a roux. Cook for 3 minutes, stirring constantly.
  4. Add the garlic powder, onion powder and cayenne pepper, stirring to combine.
  5. Add the chicken stock, salt, pepper, thyme and bay leaves, stirring to combine.
  6. Add the duck, okra, tomatoes, green onions and parsley, stirring to combine.
  7. Reduce the heat to low, cover and simmer for 30 minutes, stirring occasionally.
  8. Serve over cooked white rice.
