Ingredients:
- 2 tablespoons vegetable oil
- 2 cups chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped bell pepper

- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 2 cups chicken stock
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 2 bay leaves
- 2 pounds duck, cut into bite-sized pieces
- 1/2 cup sliced okra
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup chopped parsley
Directions:
- Heat the oil in a large pot over medium heat.
- Add the onions, celery and bell pepper and cook until softened, about 5 minutes.
- Add the flour, stirring to make a roux. Cook for 3 minutes, stirring constantly.
- Add the garlic powder, onion powder and cayenne pepper, stirring to combine.
- Add the chicken stock, salt, pepper, thyme and bay leaves, stirring to combine.
- Add the duck, okra, tomatoes, green onions and parsley, stirring to combine.
- Reduce the heat to low, cover and simmer for 30 minutes, stirring occasionally.
- Serve over cooked white rice.
