Veggie-Packed Sweet Potato and Black Bean Chili

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1 (14.5 ounces) can fire-roasted diced tomatoes
  • 3 cups vegetable broth
  • 1 (15 ounces) can black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1/4 cup chopped fresh cilantro, for garnish
  • Sour cream, for garnish (optional)

Directions:

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until softened and lightly browned, about 5 minutes.
  3. Add the sweet potatoes, chili powder, cumin, smoked paprika, cayenne pepper (if using), and salt. Cook for 2 minutes, stirring occasionally.
  4. Pour in the diced tomatoes, vegetable broth, and black beans. Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
  5. Add the frozen corn and cook for an additional 5 minutes, or until the sweet potatoes are tender.
  6. Taste and adjust seasonings, as desired.
