Ingredients:

  • 2 pounds small potatoes, cut into wedges

  • 1 cucumber, chopped
  • 1/4 cup pitted kalamata olives
  • 4 hard boiled eggs, sliced
  • 1/4 cup capers
  • 1/4 cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1/4 cup olive oil

Directions:
