Vegan Quinoa Niçoise Salad Recipe

Ingredients:

  • 1 cup dry quinoa

  • 1/2 cup cooked green beans
  • 1/2 cup cooked chickpeas
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup roasted red peppers, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly-squeezed lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon freshly-ground black pepper

Directions:

  1. In a medium pot, bring the quinoa, water, and salt to a boil over medium-high heat. Reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the water is absorbed.
  2. Remove the pot from the heat and allow the quinoa to cool for 10 minutes. Fluff the quinoa with a fork.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, green beans, chickpeas, Kalamata olives, roasted red peppers, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, oregano, and pepper.
  5. Pour the dressing over the quinoa mixture and toss to combine.
