Vegan Quinoa Niçoise Salad Recipe
This vegan quinoa niçoise salad is a delicious and healthy salad recipe that is packed with protein, fiber and omega-3 fatty acids. Ingredients:
- 1 cup dry quinoa
- 2 cups water
- 1/2 teaspoon sea salt
- 1 cup cherry tomatoes, halved
- 1/2 cup cooked green beans
- 1/2 cup cooked chickpeas
- 1/2 cup Kalamata olives, pitted
- 1/2 cup roasted red peppers, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons freshly-squeezed lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon freshly-ground black pepper
Directions:
- In a medium pot, bring the quinoa, water, and salt to a boil over medium-high heat. Reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the water is absorbed.
- Remove the pot from the heat and allow the quinoa to cool for 10 minutes. Fluff the quinoa with a fork.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, green beans, chickpeas, Kalamata olives, roasted red peppers, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve the salad at room temperature, or chilled.
