Avocado Niçoise Salad Recipe

A classic Niçoise Salad but with a twist – avocado! This easy to make salad is full of flavor and nutrition. It’s vegan, gluten free and packed with healthy ingredients like green beans, tomatoes, potatoes, and of course, avocado. Perfect for a light lunch or as a side dish for dinner.

Ingredients:

  • 2 large avocados, diced
  • 1/2 lb. green beans, trimmed and steamed
  • 2 large tomatoes, diced
  • 2 potatoes, boiled and diced
  • 1/2 red onion, diced
  • 1/4 cup capers
  • 1/4 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Directions:

  1. Steam the green beans in a steamer basket for 5 minutes, or until tender. Let cool and set aside.
  2. Boil the potatoes in a medium saucepan of salted water for 15 minutes, or until tender. Let cool and set aside.
  3. In a large bowl, combine the diced avocados, green beans, tomatoes, potatoes, red onion, capers, and olives.
  4. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, sea salt, and ground black pepper. Pour the dressing over the salad and toss to combine.
  5. Refrigerate the salad for at least 1 hour to allow the flavors to meld. Serve chilled.
  6. Optional: Top with crumbled feta cheese or toasted pine nuts for extra flavor.
