Shrimp Niçoise Salad Recipe
This Shrimp Niçoise Salad is an easy and delicious way to get your seafood fix. A mediterranean-style recipe, it’s loaded with fresh vegetables, shrimp, olives and a light vinaigrette dressing. Perfect for a light lunch or summer dinner, this healthy salad is sure to become a favorite.
Ingredients:
- 1 lb. cooked and peeled shrimp
- 1/2 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/2 cup kalamata olives
- 1/2 cup red onion, diced
- 1/4 cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and Pepper to taste
Directions:
- In a large bowl, combine the lettuce, tomatoes, cucumber, olives, and red onion. Toss to combine.
- In a separate bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, garlic, salt, and pepper.
- Add the shrimp to the salad and pour the vinaigrette over the salad. Toss to combine.
- Cover and chill the salad for at least 30 minutes before serving.
- Serve the salad with extra vinaigrette on the side.
