Herbed Niçoise Salad Recipe
This herbed Niçoise salad is a delicious and healthy meal perfect for a summer lunch or dinner. It’s easy to make, and packed with flavourful ingredients such as fresh herbs, green beans, potatoes, and a tangy vinaigrette dressing. It’s sure to become a family favourite!
Ingredients:
- 2 lbs baby potatoes, halved
- 1 lb green beans, trimmed
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 tsp Dijon mustard
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 2 tbsp fresh herbs, chopped (such as parsley, oregano, basil, thyme, etc)
- 1 (6-oz) can tuna, drained and flaked
- 1/2 cup pitted kalamata olives
- 1/4 cup capers, drained
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 hard-boiled eggs, quartered
Directions:
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 8 minutes. Add green beans and cook until crisp-tender, about 4 minutes. Drain and rinse with cold water.
- In a small bowl, whisk together olive oil, vinegar, garlic, mustard, salt, and pepper. Stir in herbs.
- In a large bowl, combine potatoes, green beans, tuna, olives, capers, tomatoes, onion, and eggs. Pour dressing over the top and toss to combine.
- Transfer salad to a serving bowl and garnish with additional herbs, if desired.
- Serve immediately or refrigerate for up to 3 days.
