Ingredients:
- 1 (14-ounce) can artichoke hearts, drained and quartered

- 1/2 cup pitted and halved Kalamata olives
- 1/4 cup crumbled feta cheese
- 3 tablespoons freshly chopped Italian parsley leaves
- 2 tablespoons Dijon mustard
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Directions:
- In a large bowl, combine the artichoke hearts, red onion, celery, bell pepper, Kalamata olives, feta cheese, and parsley.
- In a separate small bowl, whisk together the mustard, olive oil, lemon juice, salt, and pepper.
