This Grilled Vegetable Salad with Goat Cheese is a delicious and healthy way to enjoy the summer harvest! Fresh vegetables are grilled to perfection and then topped with creamy, tangy goat cheese and a zesty vinaigrette. It’s the perfect side dish for your next BBQ or summer gathering.

Ingredients:

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch pieces
  • 1 yellow squash, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • ½ cup crumbled goat cheese
  • 3 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil

Directions:

  1. Preheat your grill to medium-high heat.
  2. Place the bell peppers, zucchini, yellow squash, and red onion on a large baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Grill the vegetables, turning occasionally, until they are lightly charred and tender, about 8 minutes.
  4. Transfer the grilled vegetables to a large bowl. Add the crumbled goat cheese and gently toss to combine.
  5. In a small bowl, whisk together the white wine vinegar, Dijon mustard, and olive oil. Pour the dressing over the vegetables and toss to coat.
  6. Serve the salad warm or at room temperature.
  7. Enjoy!
