Mediterranean Chickpea Salad with Goat Cheese and Herbs

A delicious and healthy Mediterranean inspired salad, this recipe is made with chickpeas, goat cheese, fresh herbs and tossed in a zesty lemon vinaigrette. Perfect as a side dish or main course for a summer meal.

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup crumbled goat cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the chickpeas, goat cheese, parsley and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey and mustard.
  3. Pour the dressing over the chickpea mixture and toss to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving.
  6. Serve chilled or at room temperature.
  7. Garnish with additional herbs, if desired.
