Roasted Vegetable and Goat Cheese Couscous Salad

A delicious and healthy salad packed with flavor! This Roasted Vegetable and Goat Cheese Couscous Salad is a great side dish or light lunch. Roasted vegetables, fresh herbs, and creamy goat cheese are tossed with couscous for a hearty and filling salad.

Ingredients:

  • 1 cup couscous
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • ½ cup crumbled goat cheese
  • ¼ cup chopped fresh parsley
  • 2 tablespoons freshly squeezed lemon juice

Directions:

  1. Preheat oven to 400°F.
  2. In a large bowl, combine zucchini, bell pepper, onion, olive oil, Italian seasoning, garlic powder, salt, and pepper. Mix to combine.
  3. Spread vegetables onto a baking sheet and roast for 15 minutes.
  4. Meanwhile, bring 1 cup of water to a boil and add couscous. Cook for 8-10 minutes or until couscous is cooked through.
  5. In a large bowl, combine cooked couscous, roasted vegetables and goat cheese. Mix to combine.
  6. Add chopped parsley and lemon juice and mix to combine.
  7. Serve warm or chilled.
