Roasted Vegetable and Goat Cheese Couscous Salad
A delicious and healthy salad packed with flavor! This Roasted Vegetable and Goat Cheese Couscous Salad is a great side dish or light lunch. Roasted vegetables, fresh herbs, and creamy goat cheese are tossed with couscous for a hearty and filling salad.
Ingredients:
- 1 cup couscous
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 onion, diced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- ½ cup crumbled goat cheese
- ¼ cup chopped fresh parsley
- 2 tablespoons freshly squeezed lemon juice
Directions:
- Preheat oven to 400°F.
- In a large bowl, combine zucchini, bell pepper, onion, olive oil, Italian seasoning, garlic powder, salt, and pepper. Mix to combine.
- Spread vegetables onto a baking sheet and roast for 15 minutes.
- Meanwhile, bring 1 cup of water to a boil and add couscous. Cook for 8-10 minutes or until couscous is cooked through.
- In a large bowl, combine cooked couscous, roasted vegetables and goat cheese. Mix to combine.
- Add chopped parsley and lemon juice and mix to combine.
- Serve warm or chilled.
