Lemon Dill Asparagus and Goat Cheese Salad

This delicious salad combines the freshness of bright lemon, the pungent flavor of dill, and the creaminess of goat cheese for a light and flavorful dish. With just a few simple ingredients, this salad is perfect for a quick side or light meal.

Ingredients:

  • 2 bunches of asparagus, trimmed and cut into 1 inch pieces
  • 2 tablespoons of olive oil
  • Juice of 1 lemon
  • 2 teaspoons of freshly chopped dill
  • Salt and pepper to taste
  • 1/3 cup of crumbled goat cheese

Directions:

  1. Preheat oven to 400 degrees.
