Butternut Squash and Goat Cheese Salad with Balsamic Vinaigrette
This delicious and light salad is the perfect side dish for any meal. It features roasted butternut squash, creamy goat cheese, and a flavorful balsamic vinaigrette. The combination of flavors will have everyone coming back for more.
Ingredients:
- 1 butternut squash, peeled, seeded, and diced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1/4 cup olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 5 ounces mixed greens
- 1/4 cup crumbled goat cheese
Directions:
- Preheat the oven to 400°F.
- Toss the diced butternut squash with the olive oil, salt and pepper. Spread it out on a baking sheet and roast for 20 minutes until the squash is tender and lightly browned.
- In a small bowl, whisk together the balsamic vinegar, honey, olive oil, lemon juice, garlic, salt and pepper.
- In a large bowl, combine the mixed greens with the roasted butternut squash.
- Pour the dressing over the salad and toss to combine.
- Sprinkle the crumbled goat cheese over the top of the salad.
- Serve the salad immediately.
