A classic French dessert, cream puffs made from scratch are a delicious treat that will make you look and feel like a professional pastry chef! These homemade cream puffs are made with a light and airy choux pastry and filled with a rich and creamy custard filling for a truly indulgent experience.
Ingredients:
- 1 cup of water
- 1/2 cup of butter
- 1 cup of all-purpose flour
- 4 eggs
- 1/3 cup of sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- 1/2 cup of whole milk
- 3 tablespoons of cornstarch
- 1/4 cup of heavy cream
Directions:
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- In a medium saucepan, bring the water and butter to a boil. Once boiling, add the flour and stir until a dough forms and the mixture pulls away from the sides of the pan.
- Remove from heat and transfer the mixture to a large bowl. Whisk in the eggs, one at a time, until the dough is smooth and glossy. Add the sugar, vanilla, and salt and whisk until combined.
- Using a spoon, scoop the dough into small balls onto the prepared baking sheet. Bake for 25 minutes, or until golden brown and puffed up.
- Meanwhile, in a medium saucepan, combine the milk, cornstarch, and cream. Cook over medium heat, whisking constantly, until the mixture thickens. Remove from heat and let cool.
- Once the cream puffs have cooled, use a sharp knife to cut off the tops and set aside. Fill the puffs with the cream mixture, then place the tops back on. Serve warm or chilled.
- Enjoy!
