Chocolate-Filled Eclairs Recipe

Ingredients:

  • 1 cup water
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 4 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 tablespoons cocoa powder
  • 2 cups heavy cream
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup confectioners’ sugar

Directions:

  1. Preheat the oven to 400 degrees F. Grease a baking sheet with butter and set aside.
  2. In a medium saucepan, combine the water, butter, and salt. Bring to a boil over medium heat and then remove from the heat.
  3. Add the flour and stir until the mixture forms a ball. Place the mixture in a bowl and beat in the eggs, one at a time, until the mixture is smooth.
  4. Drop the dough by the tablespoonful onto the prepared baking sheet. Bake for 25 to 30 minutes, or until golden brown. Allow to cool.
  5. In a medium saucepan, heat the cream to a simmer. Add the sugar, cocoa powder, and chocolate chips. Stir until the chocolate is melted and the mixture is smooth. Remove from the heat and allow to cool.
  6. Fill each of the eclairs with the chocolate pastry cream. Place on a wire rack over a baking sheet.
  7. In a small bowl, stir together the confectioners’ sugar and 1 to 2 tablespoons of water to form a glaze. Drizzle over the filled eclairs and allow to cool before serving.
