Chocolate-Filled Eclairs Recipe

Ingredients:
- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 4 eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 tablespoons cocoa powder
- 2 cups heavy cream
- 1/2 cup semisweet chocolate chips
- 1/4 cup confectioners’ sugar
Directions:
- Preheat the oven to 400 degrees F. Grease a baking sheet with butter and set aside.
- In a medium saucepan, combine the water, butter, and salt. Bring to a boil over medium heat and then remove from the heat.
- Add the flour and stir until the mixture forms a ball. Place the mixture in a bowl and beat in the eggs, one at a time, until the mixture is smooth.
- Drop the dough by the tablespoonful onto the prepared baking sheet. Bake for 25 to 30 minutes, or until golden brown. Allow to cool.
- In a medium saucepan, heat the cream to a simmer. Add the sugar, cocoa powder, and chocolate chips. Stir until the chocolate is melted and the mixture is smooth. Remove from the heat and allow to cool.
- Fill each of the eclairs with the chocolate pastry cream. Place on a wire rack over a baking sheet.
- In a small bowl, stir together the confectioners’ sugar and 1 to 2 tablespoons of water to form a glaze. Drizzle over the filled eclairs and allow to cool before serving.
