Pistachio-Filled Eclairs Recipe
Pistachio-Filled Eclairs are a delicious and indulgent treat that’s sure to delight your taste buds. Sweet choux pastry is filled with creamy, nutty pistachio cream and topped with a rich icing. Perfect for any special occasion or just to treat yourself and your family.
Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1 cup water
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 cup shelled pistachios, finely chopped
- 1/2 cup heavy cream
- 1/2 teaspoon almond extract
- 1/2 cup confectioners’ sugar
- 1/4 cup semi-sweet chocolate chips
Directions:
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- In a medium saucepan, melt butter with water over medium heat. When boiling, add flour all at once, and stir vigorously with a wooden spoon or heat-resistant spatula until mixture forms a ball. Remove from heat and let cool for a few minutes.
- Add eggs one at a time, beating well with a wooden spoon after each addition. When mixture is smooth and glossy, drop heaping tablespoons of dough onto prepared baking sheet, spacing them about 3 inches apart.
- Bake for 15-20 minutes, until golden brown. Remove from oven and let cool.
- In a medium bowl, beat together the pistachios, cream, almond extract, and sugar until light and fluffy. Cut a slit in the side of each eclair and fill with the pistachio cream.
- In a small bowl, melt chocolate chips in the microwave, stirring every 30 seconds until completely melted. Drizzle melted chocolate over the tops of the filled eclairs.
- Let chocolate set before serving. Enjoy!
