Pistachio-Filled Eclairs Recipe

Pistachio-Filled Eclairs are a delicious and indulgent treat that’s sure to delight your taste buds. Sweet choux pastry is filled with creamy, nutty pistachio cream and topped with a rich icing. Perfect for any special occasion or just to treat yourself and your family.

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup water
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup heavy cream
  • 1/2 teaspoon almond extract
  • 1/2 cup confectioners’ sugar
  • 1/4 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  2. In a medium saucepan, melt butter with water over medium heat. When boiling, add flour all at once, and stir vigorously with a wooden spoon or heat-resistant spatula until mixture forms a ball. Remove from heat and let cool for a few minutes.
  3. Add eggs one at a time, beating well with a wooden spoon after each addition. When mixture is smooth and glossy, drop heaping tablespoons of dough onto prepared baking sheet, spacing them about 3 inches apart.
  4. Bake for 15-20 minutes, until golden brown. Remove from oven and let cool.
  5. In a medium bowl, beat together the pistachios, cream, almond extract, and sugar until light and fluffy. Cut a slit in the side of each eclair and fill with the pistachio cream.
  6. In a small bowl, melt chocolate chips in the microwave, stirring every 30 seconds until completely melted. Drizzle melted chocolate over the tops of the filled eclairs.
  7. Let chocolate set before serving. Enjoy!
