Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter
- 2 cups water
- 4 large eggs
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 3 tablespoons cold water
Directions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, stir together the flour and salt; set aside.
- In a medium saucepan, melt the butter in the water over medium heat. Once the butter has melted, turn the heat up to high and bring the mixture to a boil.
- Add the flour-salt mixture to the boiling water and reduce the heat to low. Stir vigorously until the dough forms a ball, about 2 minutes.
- Remove the dough from the heat and let cool for a few minutes. Add the eggs one at a time, stirring vigorously until the dough is smooth and glossy. Stir in the vanilla.
- Using a pastry bag, pipe out the dough onto a greased baking sheet in 6-inch logs. Bake for 25 minutes, or until golden brown.
- In a medium bowl, whisk together the cream, sugar, cornstarch and cold water. Heat the mixture over medium-high heat for about 5 minutes, stirring constantly, until it thickens. Remove from heat and let cool.
- Once the eclairs have cooled, cut each log in half and fill with the cooled custard cream. Serve and enjoy!
