Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter
- 1 cup water
- 2 eggs
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 3 ripe bananas
- 1/4 cup brown sugar
- 3 tablespoons butter
- 1/4 teaspoon ground cinnamon
Directions:
- Preheat oven to 375°F. Grease a baking sheet and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a medium saucepan, melt butter over medium heat. Add the water and bring to a boil. Remove from the heat and add the flour mixture, stirring until it forms a ball. Allow to cool slightly.
- In a separate bowl, beat the eggs and sugar together until light and foamy. Gradually add the egg mixture to the water and flour mixture, stirring until combined. Add the vanilla extract.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, leaving a few inches between each puff. Bake for 20 minutes, or until golden brown.
- Meanwhile, in a small saucepan, heat the heavy cream over medium heat. Peel and slice the bananas and add them to the cream. Cook for 3-5 minutes, stirring occasionally, until the bananas are softened. Add the brown sugar, butter, and cinnamon and stir until the sugar is dissolved. Remove from heat and set aside.
- Once the cream puffs are done baking, let cool. Slice each puff in half, then spoon the caramelized banana cream into each puff. Serve immediately.
