Ingredients:

  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup strong brewed coffee
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon instant espresso powder
  • 1/4 teaspoon ground cinnamon

Directions:

  1. Preheat oven to 350 degrees F. Grease a 12-cup muffin tin with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Alternately add the flour mixture and the milk to the butter mixture, beginning and ending with the flour mixture. Beat until just combined.
  5. Divide the batter among the muffin cups and bake for 18-20 minutes, or until a toothpick inserted in the center of a puff comes out clean.
  6. Meanwhile, in a medium saucepan, combine the coffee, chocolate chips, cream, powdered sugar, espresso powder, and cinnamon. Heat over low heat, stirring occasionally, until the mixture is melted and smooth.
