Ingredients:
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup strong brewed coffee
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon instant espresso powder
- 1/4 teaspoon ground cinnamon
Directions:
- Preheat oven to 350 degrees F. Grease a 12-cup muffin tin with cooking spray.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- Alternately add the flour mixture and the milk to the butter mixture, beginning and ending with the flour mixture. Beat until just combined.
- Divide the batter among the muffin cups and bake for 18-20 minutes, or until a toothpick inserted in the center of a puff comes out clean.
- Meanwhile, in a medium saucepan, combine the coffee, chocolate chips, cream, powdered sugar, espresso powder, and cinnamon. Heat over low heat, stirring occasionally, until the mixture is melted and smooth.
