Ingredients:

• 2 tablespoons of coconut oil
• 1 onion, chopped
• 2 cloves of garlic, minced
• 2 tablespoons of red curry paste
• 2 cups of coconut milk
• 1 pound of boneless, skinless chicken breasts, cut into cubes
• 2 tablespoons of fish sauce
• 1 teaspoon of sugar
• 1 teaspoon of freshly grated ginger
• 1/2 cup of green peas
• 2 tablespoons of freshly chopped cilantro
• Salt and freshly ground black pepper, to taste

Directions:

1. Heat the coconut oil in a large pot over medium-high heat.

2. Add the onion and garlic and cook until softened, about 3 minutes.

3. Add the red curry paste and cook for another minute.

4. Pour in the coconut milk, stirring to combine.

5. Add the chicken cubes and cook for about 10 minutes.

6. Stir in the fish sauce, sugar, and ginger.

7. Add the green peas and cook for another 3 minutes.
