Chicken in Red Wine

Ingredients:
- 4 chicken breasts
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup red wine
- 1/2 cup chicken broth
- 1 tablespoon tomato paste
- 2 teaspoons fresh thyme leaves
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 tablespoons butter
- 2 tablespoons chopped parsley, for garnish
Directions:
- Season the chicken breasts with salt and pepper and lightly dust with all-purpose flour.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
- Remove the chicken from the skillet and set aside. Add the diced onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add the red wine, chicken broth, tomato paste, thyme, and oregano to the skillet and stir to combine. Return the chicken to the skillet and bring the mixture to a boil.
- Reduce the heat to low and simmer for 15-20 minutes, or until the sauce has thickened and the chicken is cooked through.
- Stir in the butter until melted and season with salt and pepper to taste.
- Serve over mashed potatoes and garnish with chopped parsley, if desired.
