Homemade Chicken Noodle Soup
Nothing beats a warm, comforting bowl of homemade chicken noodle soup on a cold winter night. This easy and delicious recipe is sure to become a family favorite. All you need is a few simple ingredients and you can have a delicious and healthy meal in no time.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups cooked and shredded chicken
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 1 bay leaf
- 2 cups uncooked egg noodles
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and sauté until the vegetables are softened, about 5 minutes.
- Add the chicken, broth, thyme, oregano, black pepper, salt, red pepper flakes, and bay leaf and bring to a boil. Reduce the heat and simmer for 10 minutes.
- Add the egg noodles and cook until noodles are tender, about 10 minutes.
- Remove the bay leaf and discard. Taste and adjust seasonings if needed.
- Ladle the soup into bowls and serve.
- Serve the soup with crusty bread or crackers, if desired.
