Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 2 cups cooked chicken, shredded
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup shredded Mexican-style cheese
  • 4 large flour tortillas
  • Sour cream, for serving (optional)
  • Salsa, for serving (optional)

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the chicken, chili powder, cumin, and paprika and cook until the chicken is heated through, about 5 minutes more.
  3. Remove the skillet from the heat and stir in the cheese. Set aside.
  4. Lay the tortillas out on a work surface. Divide the chicken mixture among the tortillas, spreading it evenly on the bottom half of each tortilla.
  5. Fold the top half of the tortillas over the chicken mixture and press down lightly.
  6. Heat a large skillet over medium heat. Add the quesadillas, one at a time, and cook until golden brown and the cheese has melted, about 3 minutes per side.
  7. Remove from the skillet and cut into wedges. Serve with sour cream and salsa, if desired.
