This Caprese-Style Waffles recipe is a unique twist on a traditional breakfast item, combining the flavors of caprese salad with fluffy, savory waffles. Fresh tomatoes, basil, and mozzarella cheese give these waffles a delicious Italian flavor that is sure to please.

Ingredients:

  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1-1/2 cups buttermilk
  • 3 tablespoons melted butter
  • 1/2 cup chopped fresh basil
  • 1/2 cup diced fresh tomatoes
  • 1/2 cup shredded mozzarella cheese

Directions:

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, whisk together the eggs, buttermilk, and melted butter.
  2. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the basil, tomatoes, and mozzarella cheese.
  3. Heat a waffle iron according to the manufacturer’s directions. Grease the iron with cooking spray or butter. Pour the waffle batter into the preheated waffle iron, using about 1/3 cup per waffle. Close the lid and cook until the waffles are golden brown, about 4 minutes.
  4. Remove the waffles from the iron and transfer to a wire rack to cool slightly.
  5. Repeat with the remaining batter, greasing the iron between each waffle.
  6. Serve the waffles warm with a sprinkle of fresh basil, if desired.
