Ingredients:
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs, lightly beaten
- 1-1/2 cups buttermilk
- 3 tablespoons melted butter
- 1/2 cup chopped fresh basil
- 1/2 cup diced fresh tomatoes
- 1/2 cup shredded mozzarella cheese
Directions:
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, whisk together the eggs, buttermilk, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the basil, tomatoes, and mozzarella cheese.
- Heat a waffle iron according to the manufacturer’s directions. Grease the iron with cooking spray or butter. Pour the waffle batter into the preheated waffle iron, using about 1/3 cup per waffle. Close the lid and cook until the waffles are golden brown, about 4 minutes.
- Remove the waffles from the iron and transfer to a wire rack to cool slightly.
- Repeat with the remaining batter, greasing the iron between each waffle.
