Creamy Gorgonzola Pasta Recipe

Ingredients:

  • 1 lb. rigatoni pasta
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup gorgonzola cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh parsley

Directions:

  1. Bring a large pot of salted water to a boil over high heat. Add the rigatoni and cook until al dente, about 8 minutes.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 3 minutes.
  3. Add the white wine and simmer until reduced by half, about 5 minutes.
