Sausage and Pepper Pasta

This delicious Sausage and Pepper Pasta is the perfect easy weeknight meal. It’s full of Italian flavors and comes together in one pot, making it a great option for busy families. The combination of sweet peppers, spiced sausage, and creamy pasta makes for a comforting meal that everyone will love.

Ingredients:

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 3 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) package penne pasta
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions:

  1. In a large pot or Dutch oven, cook the sausage until browned. Remove the sausage and set aside.
  2. In the same pot, add the onion, bell peppers, garlic, Italian seasoning, and red pepper flakes. Cook until the vegetables are softened, about 5 minutes.
  3. Add the chicken broth, tomatoes, and pasta. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
  4. Return the cooked sausage to the pot and stir to combine.
  5. Add the Parmesan cheese and stir to combine.
  6. Season with salt and pepper, to taste.
  7. Serve warm with extra Parmesan cheese, if desired.
