Shrimp and Spinach Pasta

Ingredients:

  • 1 lb. shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 cups spinach, chopped
  • 1/2 cup white wine
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 8 oz. dried pasta
  • 3 tbsp butter
  • 1/4 cup Parmesan cheese, grated

Directions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and shrimp and cook until the shrimp is no longer pink, about 3 minutes.
  3. Add the white wine and cook for an additional 2 minutes.
  4. Add the spinach and stir until wilted, about 1 minute.
  5. Season with salt and pepper, to taste.
  6. Drain the pasta and add it to the skillet with the shrimp and sauce. Stir in the butter.
  7. Garnish with Parmesan cheese and serve.
