Ingredients:

  • 1 onion, diced
  • 2 carrots, diced
  • 2 red bell peppers, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 cup tomato paste
  • 1/2 cup vegetable broth
  • 1 pound bow-tie pasta
  • 1/4 cup freshly grated Parmesan cheese

Directions:

  1. Preheat oven to 425°F (218°C).
  2. In a large bowl, toss together onion, carrots, bell peppers, garlic, olive oil, oregano, basil, thyme, black pepper, red pepper flakes, and salt.
  3. Spread vegetables on a large baking sheet and roast for 20-25 minutes, until vegetables are tender and lightly browned.
  4. In a large saucepan, combine roasted vegetables, tomato paste, and vegetable broth. Simmer for 10 minutes.
  5. Meanwhile, cook the pasta in a large pot of boiling salted water according to package instructions.
  6. Once pasta is cooked, drain and add to saucepan with vegetables. Stir to combine.
  7. Serve with Parmesan cheese and enjoy!
