Vegan Gumbo with Okra and Veggies
This Vegan Gumbo with Okra and Veggies is a delicious comfort dish that will please any vegan. The combination of okra, veggies, and a flavorful broth make this an easy, hearty meal that is sure to be a crowd pleaser.
Ingredients:
- 1 tablespoon of Olive Oil
- 1 Onion, chopped
- 2 cloves of Garlic, minced
- 1 large red Bell Pepper, chopped
- 1 teaspoon of Thyme
- 1 teaspoon of Oregano
- 1 teaspoon of Paprika
- 1 teaspoon of Cumin
- 1 teaspoon of Salt
- 1 teaspoon of Black Pepper
- 2 cups of Vegetable Broth
- 1 (15 ounce) can of diced Tomatoes
- 1 cup of Okra, sliced
- 1 cup of frozen Corn
- 1 cup of frozen Green Beans
- 1 (15 ounce) can of Kidney Beans, drained and rinsed
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell pepper, thyme, oregano, paprika, cumin, salt, and black pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the vegetable broth, diced tomatoes, okra, corn, and green beans. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Add the kidney beans and simmer for 5 more minutes.
- Adjust the seasoning to taste. Serve hot.
- Garnish with chopped parsley if desired.
