Vegan Spaghetti Bolognese with TVP

This healthy vegan spaghetti bolognese dish is a great way to enjoy a traditional favorite without the meat. It features delicious TVP (textured vegetable protein) in place of ground beef, and is flavored with garlic, onion and herbs. Serve it over spaghetti noodles for a hearty and satisfying vegan dinner.

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup textured vegetable protein (TVP)
  • 1 cup vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato paste
  • 1/2 teaspoon sugar
  • 1 (16-ounce) package spaghetti noodles

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, carrots and celery and sauté for about 5 minutes, or until the vegetables are softened.
  2. Add the TVP and vegetable broth and stir to combine. Simmer for 5 minutes, or until the TVP is softened.
  3. Add the diced tomatoes, Italian seasoning, salt and pepper and stir to combine. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  4. Stir in the tomato paste and sugar and simmer for another 10 minutes, or until the sauce has thickened.
  5. Meanwhile, bring a large pot of salted water to a boil over high heat. Add the spaghetti noodles and cook according to package instructions.
  6. Drain the noodles and divide among 4 plates. Top with the vegan bolognese sauce.
  7. Serve the vegan spaghetti bolognese with freshly grated Parmesan cheese, if desired.
