Ingredients:

  • 3 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup bacon, diced
  • 1 (12 ounce) bottle beer
  • 1 cup beef broth

Directions:

  1. Preheat oven to 350°F.
  2. Heat olive oil in a large dutch oven over medium-high heat.
  3. Season beef chuck roast generously with salt and pepper.
  4. Add beef to the hot oil and sear on all sides until golden brown. Transfer beef to a plate.
  5. Lower heat to medium. Add diced bacon and cook until golden and crisp. Remove bacon from the pan and set aside.
  6. Add diced onion and garlic to the pan and cook until softened, about 5 minutes. Add in thyme, rosemary, smoked paprika, salt, and pepper. Stir to combine.
  7. Pour in beer and beef broth. Stir to combine.
  8. Return beef to the pan and bring to a simmer. Cover and transfer to preheated oven. Cook for 2 1/2 hours, or until beef is fork tender.
