Gluten-Free Beef Stroganoff and Rice
This gluten-free beef stroganoff and rice is a delicious and hearty dinner with a combination of savory and creamy flavors. Ingredients:
- 1 pound ground beef
- 1 yellow onion, diced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 tablespoons butter
- 1 cup long grain white rice
- 2 cups beef broth
- 1/4 cup sour cream
- 1/4 cup fresh parsley, chopped
Directions:
- In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
- Add the onion and cook until softened. Stir in the diced tomatoes, garlic powder, oregano, thyme, smoked paprika, salt, and pepper.
- Reduce heat to low and simmer for 10 minutes, stirring occasionally.
- Meanwhile, in a medium saucepan, melt the butter over medium heat. Add the rice and stir to coat. Pour in the beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18 minutes.
- Stir the sour cream and parsley into the beef mixture. Simmer for an additional 3 minutes.
- Serve the beef stroganoff over the cooked rice.
