Gluten-Free Beef Stroganoff and Rice

Ingredients:

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 1 cup long grain white rice
  • 2 cups beef broth
  • 1/4 cup sour cream
  • 1/4 cup fresh parsley, chopped

Directions:

  1. In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
  2. Add the onion and cook until softened. Stir in the diced tomatoes, garlic powder, oregano, thyme, smoked paprika, salt, and pepper.
  3. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  4. Meanwhile, in a medium saucepan, melt the butter over medium heat. Add the rice and stir to coat. Pour in the beef broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18 minutes.
  6. Stir the sour cream and parsley into the beef mixture. Simmer for an additional 3 minutes.
  7. Serve the beef stroganoff over the cooked rice.
