BBQ Pulled Pork Macaroni and Cheese Recipe

Ingredients:
- 1 lb. elbow macaroni
- 2 cups shredded cheese (cheddar, Monterey jack, mozzarella, etc)
- 1 lb. pulled pork (cooked)
- 1/2 cup BBQ sauce
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 cup milk
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions:
- Preheat oven to 350°F.
- Cook macaroni according to package directions.
- Drain and set aside.
- In a large skillet over medium heat, add butter. Once melted, add onions and bell peppers. Cook for 3-4 minutes, or until softened.
- Add flour and stir to combine. Cook for 1 minute.
- Slowly add milk while whisking continuously. Bring to a simmer and cook for 3-4 minutes, or until thickened.
- Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Add in BBQ sauce and pulled pork. Cook for 2 minutes.
- Mix cooked macaroni with shredded cheese and BBQ pulled pork mixture. Pour into a large baking dish. Bake for 30 minutes, or until bubbling and golden brown.
