Creamy Crab Rangoon Macaroni and Cheese

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 (8-ounce) package cream cheese, softened
  • 1 tablespoon crab rangoon seasoning
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups dry macaroni
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated cheddar cheese

Directions:

  1. Preheat oven to 350°F. Grease an 8×8-inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the cream cheese, crab rangoon seasoning, garlic, milk, salt and pepper and stir to combine. Cook until the cream cheese is melted and the sauce is creamy, about 3 minutes.
  3. Meanwhile, bring a large pot of salted water to a boil over high heat. Add the macaroni and cook until al dente, about 7 minutes. Drain the macaroni and return it to the pot.
  4. Add the cream cheese sauce and Parmesan cheese to the pot and stir to combine. Pour the macaroni and cheese into the prepared baking dish.
  5. Bake for 15 minutes, then sprinkle the top with the cheddar cheese. Bake for an additional 10 minutes until the cheese is melted and bubbly.
  6. Remove from the oven and let cool for 5 minutes before serving.
