Gruyère Toasts with French Onion Soup

Ingredients:
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups beef broth
- 1/2 cup white wine
- 1/4 cup sherry
- 4 thick slices of French bread
- 4 ounces Gruyère cheese, grated
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onions and cook until softened, about 5 minutes. Add the garlic, thyme, salt, and pepper and cook for another minute.
- Add the beef broth, white wine, and sherry and bring to a simmer. Simmer for 15 minutes.
